May between leftovers and family memories. I wrote about food waste, one of the great paradoxes of our time, and how to reduce it in the kitchen by giving value to scraps. I told the story of the Versilia pan, the stovetop oven in which my paternal grandmother baked her cake. Then the double history of the muffin, between England and the United States, and the challenge of biscuits without butter, eggs or gluten: crumbly, fragrant and not an impossible goal at all.
