When the days grow shorter, pumpkin arrives at the market with its warm colours and incredible shapes. Native to the Americas, it found a second home in the Veneto: the green, knobbly Chioggia pumpkin is grown a stone's throw from the lagoon, and baked "zucca barucca" was once sold in the streets of Venice.
Each variety has its own character: Mantovana is sweet and floury, Delica firm and velvety, butternut soft and easy to peel. They are perfect in soups, roasted with spices, in risotto and even in jam.
Do not throw away the seeds: washed, dried and toasted in the oven they become a crunchy snack to sprinkle over your dishes.
