San Marzano is Italy's most famous plum tomato, grown with a protected designation in the Agro Sarnese-Nocerino, between Naples and Salerno. It has firm flesh, few seeds and a sweet-tart flavour.
It is the ideal tomato for passata and peeled tomatoes, and for a quick sauce that really tastes of tomato.
