Vine tomatoes

Description

Vine tomatoes are sold still attached to their green stem, in clusters: the herbal scent you notice when touching them comes from the stem and leaves.

Their flesh is firm and juicy, with good flavour, which makes them suitable for many uses: raw in salads or diced on bruschetta, blanched and peeled for a quick sauce, blended into gazpacho. They are also the right tomato for stuffing and baking, like Roman-style rice-stuffed tomatoes.

Keep them out of the fridge, at room temperature: cold dulls their flavour and spoils their texture.
