Smoked paprika, or pimentón, is a Spanish spice: red peppers are slowly dried over oak smoke and then ground. The most famous comes from La Vera, in Extremadura.
Its sweet, smoky flavour is a little trick of plant-based cooking: a teaspoon is enough to add depth to vegan mayonnaise, carrot and cashew creams, veggie burgers and risottos. There is a sweet version and a hot one.
