The aubergine came from India and in Italy it was long viewed with suspicion: its old popular name, "mela insana" (unhealthy apple), says it all. Then the south made it a queen, from parmigiana to caponata.
There are many varieties: round and purple, long, white, striped. For pan-frying or grilling, it helps to salt them and let them drain for a couple of hours, so they lose their bitter water and absorb less oil. Charred, smoked, in burgers or sweet and sour sauces, they are among the most versatile summer vegetables.
