Thyme

Description

Thyme is a small aromatic plant that grows among the sunny rocks of the Mediterranean, with tiny leaves and an intense, balsamic scent. The ancient Greeks burned it as incense and associated it with courage.

Unlike delicate herbs such as basil and mint, it holds up well to cooking: that is why it is perfect in soffritti, bean stews, with potatoes and roast vegetables, and in marinades. A whole sprig in the pot perfumes the entire dish; to strip the leaves, simply run your fingers along the sprig, from tip to base.

Fresh or dried, it pairs beautifully with lemon, garlic and rosemary.
