Rice noodles are made with rice flour and water and are naturally gluten-free. They are the base of many Southeast Asian dishes, from stir-fried noodles to noodle soups.
They shouldn't be boiled for long: just soak them in boiling water for a few minutes until soft, then drain and toss with vegetables or pour hot broth over them. They are often sold in "nests", easy to portion.
