Sea spaghetti (Himanthalia elongata) is an Atlantic brown seaweed shaped like long, thin ribbons, sold dried.
Rehydrate it in hot water for a quarter of an hour. It tastes of the sea and has a pleasant texture: marinated with miso and tamari it garnishes soups and tofu dishes, and it's good in salads too.
