Sesame seeds

Description

Sesame is one of the oldest seed crops grown by humans, between India, Africa and the Middle East. "Open sesame", Ali Baba's magic words, may come from its pods, which burst open when ripe and drop their seeds.

Dry-toasted for a few minutes, until it starts popping like popcorn, it releases an intense aroma and becomes the perfect finish for noodles, stir-fried vegetables, rice and grain salads. Ground, it becomes tahini, the paste at the heart of hummus.

There are white seeds, milder, and black ones, more aromatic: just pairing them makes a dish more beautiful.
