Nutmeg is the seed of a tree native to the Moluccas, the "Spice Islands" of Indonesia. For centuries it was among the most expensive spices in the world, and its trade sparked wars and empires.
Grate it fresh with a small grater: a few strokes are enough, because its warm, resinous aroma is intense. It is the spice of béchamel and mashed potatoes, but it also works beautifully in vegetable soups, fresh pasta fillings, with pumpkin and spinach. Whole, it keeps for years.
