Seitan is a food made from wheat gluten, born in Chinese Buddhist cooking and popularised in the West by macrobiotics. It has a dense, slightly chewy texture.
Making it at home by rinsing a flour dough for a long time shows how much raw material it takes, one more reason to use it sparingly. Chopped and marinated with tamari and spices, or in strips with artichokes and mint, it absorbs flavours well.
