Agave syrup comes from the sap of a Mexican succulent, the same plant used to make tequila. It is runny and pale, with a sweet, neutral flavour.
It dissolves easily even when cold, which makes it handy in no-bake desserts, creams and balsamic reductions. It is very sweet: you need less of it than sugar.
