Maple syrup is made by boiling the sap of sugar maples, collected at the end of winter in Canada and the northeastern United States. It takes about forty litres of sap for one litre of syrup.
It tastes sweet, caramel-like and woody. I use it instead of honey in vegan versions, in no-bake desserts, at breakfast with yogurt and even in a spicy carrot pesto.
