Description
Rosa Marchetti is an old Italian rice variety, grown today by only a few farms. I use the biodynamic rice from Cascine Orsine, which I find especially tasty and fragrant when cooked.
Its medium grains, cooked by absorption, stay soft but separate: perfect for rice salads, one-dish meals with vegetables and pairing with courgettes, turmeric and sumac.
