Fresh oregano tastes milder and more herbaceous than dried oregano, which concentrates its essential oils and becomes more intense. They are almost two different ingredients.
The small fresh leaves are used raw, at the last moment: on grains, bowls, millet with vegetables, spring pestos, tofu and salads. If you have a plant on your balcony, let it flower: the tiny white or pink flowers are edible, very fragrant, and attract bees.
