Grana Padano is one of Italy's oldest PDO cheeses, born in the Middle Ages in the abbeys of the Po Valley. It appears in some of my older recipes, which are vegetarian.
Grated, it flavours risottos, pestos and pasta; shaved, it finishes carpaccio and salads. For vegan versions it can be replaced with nutritional yeast flakes or a nut-based pesto, which give a similar savouriness.
