Button mushrooms are the most widely cultivated mushrooms in the world, white or brown. Their mild flavour deepens when cooked.
Very fresh, they can even be used raw, blended into a sauce with sun-dried tomatoes and sunflower seeds; thinly sliced and sautéed with courgettes and dill seeds, they dress pasta. Clean them with a damp cloth rather than washing them under the tap.
