According to myth, Minthe was a nymph turned into a plant by Persephone, jealous of Hades' attention. He could not undo the spell, but gave her a scent so lovely that she would be remembered forever.
Mint is the herb of freshness. I use it raw, as whole leaves or cut into thin ribbons, to finish grain salads, couscous, spring barley dishes and grilled vegetables. In rixi e bixi it is my little twist: it goes beautifully with fresh peas.
Its aroma is volatile and heat dulls it, so always add it at the last moment. And be careful if you plant it in the garden: it is invasive and quickly takes over all the space it finds.
