Ground cumin is a warm, earthy, slightly bitter spice, essential in Middle Eastern, North African, Indian and Mexican cooking.
Fry it for a few moments in oil, without burning it, to release its aroma: that's how shakshuka begins, and how it adds depth to bean soups, fritters, pumpkin and millet. A little goes a long way.
