Turnip greens

Description

Turnip greens (cime di rapa) are the flowering shoots and leaves of a turnip variety, much loved in southern Italy: in Apulia they dress orecchiette, in Rome they are called broccoletti, in Naples friarielli.

Their flavour is bold and slightly bitter. The leaves cook in a few minutes, the stems should be sliced; even the toughest stalks can go into a broth.
