Brussels sprouts

Description

Brussels sprouts are small buds that grow along the plant's stalk, like tiny cabbages. They are at their best after the first frosts, when they turn sweeter.

Sautéed with fennel seeds and chili, or roasted, they lose their bitterness and become sweet and toasty. A cross cut at the base helps them cook evenly.
