Description
Green cardamom seeds are found inside the plant's small green pods. Whole, they release their fresh, citrusy scent slowly, which is why I use them in the cooking water of basmati rice, millet and barley.
Three or four, lightly crushed, are enough. Remember to remove them before serving: biting into a whole one is an explosion of flavour not everyone enjoys.
