Coconut butter

Description

Coconut butter is dried coconut flesh finely ground into a thick paste. It is solid at room temperature and softens when warmed.

In no-bake desserts it binds truffles and makes sauces creamy; a spoonful in soy yogurt makes it richer. It shouldn't be confused with coconut oil, which is only the fat.
