Wood sorrel

Description

Wood sorrel (Oxalis acetosella) has clover-shaped leaves and small, delicate flowers. Its Italian name comes from its sour, almost vinegary taste, strongest in the stems.

It appears in spring in gardens and pots, sometimes as a weed. Leaves, stems and flowers are used raw to add a fresh note to soups, bowls and salads. Eat it in moderation, and avoid it if you suffer from kidney stones.
