Agretti

Description

Agretti, also called saltwort or monk's beard, is a plant of salty environments that grows well near the sea. It reaches the market in spring, in bunches of leaves as thin as blades of grass.

It has a mineral, slightly tangy and salty flavour and a fleshy texture. Clean off the roots and soil, then sauté quickly with garlic and oil. Go easy on the salt: it is already salty.
