Vegetable stock is the base of risottos, soups and slow-cooked dishes. It is made by simmering onion, carrot, celery, a bay leaf and clean vegetable trimmings, such as leek tops or pea pods, in water.
Homemade, it is lighter and tastier than stock cubes; any leftovers can be frozen.
