Fresh yeast comes in soft blocks, to be kept in the fridge. It is made of live cells of a fungus, Saccharomyces cerevisiae, which turn sugars into carbon dioxide and make doughs rise.
Dissolve it in lukewarm water, never hot, ideally with a teaspoon of malt. A 25 g block is roughly equivalent to 7-8 g of dry yeast.
