Dry tomato

Description

Sun-dried tomatoes are tomatoes halved, salted and left to dry in the sun, a southern Italian tradition for preserving the taste of summer. They come dry, to be rehydrated in warm water, or in oil.

Their flavour is concentrated, sweet and savoury at once. Cut into strips they flavour stir-fried vegetables, grains and sauces; blended with sage, capers and oregano they become an intense red pesto, which with silken tofu turns into a mousse. Just a few are enough to give a dish character.
